This dish is even better as leftovers! The spices come through as well as the “heat” I’ve been heatingup and having a fried egg mixed in with it, yummmy!

Peter, this sounds really good, and, as you know, I’m not a rice fan. We’ve had some dried black-eyed peas around here for some time, so the next time we have some ham left over, I’m going to try it.

I tried to convince my hubby that I would make the traditional blackeyed peas or my Chilean tradition: lentils, but alas we did not have either. Nice recipe!
