		<description>I wish I had hte time and patience for doing sourdough, but they take a lot of commitment and time, which I don&#039;t have lots of.  Maybe I&#039;ll try and play with them later this Spring or early Summer, when I have a little more time (my weekends seem to be packed this Spring!).  Until then using prefermts (starters) like a poolish and biga are a good compromise.</description>

		<description>Ah... poolish, biga... Those terms evoke such great images in my head.  I learned how to bake bread from the book, &quot;Bread Alone&quot; -- a great primer, if I ever saw one.  Lots of good detail on the intricacies of sourdough.

Don&#039;t know that I&#039;m anywhere close to a master of sourdough (my biggest failing is a lack of time to wait for a good rise); but, it&#039;s certainly a wonderful thing to behold. And to EAT!</description>
