Maybe I'll try and play with them later this Spring or early Summer, when I have a little more time (my weekends seem to be packed this Spring!). Until then using prefermts (starters) like a poolish and biga are a good compromise. Those terms evoke such great images in my head. I learned how to bake bread from the book, "Bread Alone" -- a great primer, if I ever saw one. Lots of good detail on the intricacies of sourdough. Don't know that I'm anywhere close to a master of sourdough (my biggest failing is a lack of time to wait for a good rise); but, it's certainly a wonderful thing to behold. And to EAT!
