Looks like you know how to roux for a Gumbo! I adore it anyway I can get it, sans Okra, and that dark roux is the &quot;secret&quot;. Well done! 

Thanks for stopping by So Many Recipes. I just wanted to mention that the Colcannon really was the star of that dinner and it would be most wonderful with the corned beef your wife bought. We really couldn&#039;t believe how delicious it was. The kind you can&#039;t stop eating!</description>
