Ingredients
  

  • 1 lb bacon chopped
  • 1 large onion diced
  • 3 cloves garlic minced
  • 1/3 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 2 tbsp maple syrup
  • 1/4 cup brewed coffee
  • 1/2 tsp black pepper

Method
 

  1. Step 1: Cook chopped bacon until crispy, then remove, leaving the fat in the pan.
  2. Step 2: Sauté onion in the bacon fat until softened, about 8 minutes.
  3. Step 3: Add garlic and cook 1 minute more.
  4. Step 4: Return bacon to the pan with brown sugar, vinegar, maple syrup, coffee, and pepper.
  5. Step 5: Simmer on low 30 to 40 minutes, stirring occasionally, until thickened.
  6. Tip: Simmer low and slow so the sugars don't burn.
  7. Step 6: Pulse briefly in a food processor, if desired.
  8. Step 7: Cool before transferring to a jar.

Notes

Bacon jam thickens further as it cools, so let it cool completely before jarring for the right final texture.
