A viral pasta made with cherry tomatoes and a block of feta roasted until creamy, then tossed with pasta.

Ingredients
  

  • 8 ounces block feta cheese
  • 1 pound cherry tomatoes
  • ⅓ cup olive oil
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 12 ounces penne or rigatoni
  • 1 cup reserved pasta water
  • Fresh basil leaves for serving

Equipment

  • 9x13-inch baking dish
  • Large pot (for the pasta)
  • Wooden spoon (for mashing the feta)
  • Colander

Method
 

  1. Step 1: Preheat the oven to 400°F (200°C).
  2. Step 2: Add the tomatoes to a baking dish and nestle the feta in the center.
  3. Step 3: Drizzle with the olive oil and sprinkle with the garlic and seasonings.
  4. Step 4: Bake 30 minutes until the tomatoes burst and the feta is golden.
  5. Step 5: Cook the pasta and reserve 1 cup of the cooking water.
  6. Step 6: Mash the feta and tomatoes, toss with the pasta, and loosen with pasta water.
  7. Tip: Add the water a splash at a time.
