  • 2 large eggs
  • ¾ cup shredded mozzarella cheese
  • ½ teaspoon salt
  • ½ teaspoon garlic powder optional
  • 1 pinch Italian seasoning optional

Method
 

  1. Step 1: Preheat the oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
  2. Step 2: Blend the cottage cheese, eggs, and salt until completely smooth.
  3. Tip: Scrape down the sides so no curds are left behind.
  4. Step 3: Pour the batter onto the parchment and spread into a thin rectangle, about ¼ inch thick.
  5. Tip: An offset spatula makes this quick.
  6. Step 4: Bake for 15 minutes, until the top is set and lightly golden.
  7. Step 5: Sprinkle with mozzarella and bake 8 to 10 minutes more, until bubbly and browned in spots.
  8. Step 6: Cool 5 minutes, slice into 8 pieces, and serve warm.
