Ingredients

  • 12 ounces fettuccine or linguine
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter divided
  • 1/2 medium green cabbage finely sliced (about 4 packed cups)
  • 3 garlic cloves minced
  • 3/4 cup heavy cream
  • 3/4 cup finely grated Parmesan cheese
  • 1/2 teaspoon fine salt plus more for pasta water
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes optional
  • 1 tablespoon fresh lemon juice
  • 1/2 cup reserved starchy pasta water as needed

Equipment

  • Large pot (for cooking pasta)
  • Large skillet (for browning cabbage)
  • Tongs (for tossing pasta with sauce)
  • Colander (for draining pasta)
  • Fine grater (for Parmesan cheese)

Method

  1. Step 1: Bring a large pot of generously salted water to a boil. Cook pasta until just al dente according to package instructions, reserving 1/2 cup starchy water before draining.
  2. Step 2: While pasta cooks, heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add the sliced cabbage in an even layer. Cook 8–10 minutes, turning occasionally, until tender with browned edges.
  3. Step 3: Reduce the heat to medium. Add remaining butter, garlic, black pepper and optional red pepper flakes. Stir for 30–60 seconds until fragrant.
  4. Step 4: Add heavy cream and bring to a gentle simmer, then reduce heat to low. Add Parmesan gradually, stirring until smooth; do not boil the sauce after adding cheese.
  5. Step 5: Add drained pasta and toss vigorously. Splash in reserved pasta water, one tablespoon at a time, until the sauce clings silkily to the noodles.
  6. Step 6: Finish with lemon juice, taste and adjust salt. Serve immediately with more Parmesan and black pepper if desired.

Notes

Finely grated Parmesan blends most smoothly at low heat.
