Ingredients

  • 2 lbs chicken breasts
  • 16 oz salsa
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • rice tortillas, or lettuce, for serving

Equipment

  • 1 Slow cooker

Method

  1. Step 1: Place chicken breasts in a slow cooker.
  2. Step 2: Pour salsa over the chicken and sprinkle with taco seasoning.
  3. Step 3: Cook on low for 6 hours, or high for 3 to 4 hours, until shreddable.
  4. Tip: Cooking on low gives the most tender result.
  5. Step 4: Shred the chicken directly in the slow cooker and stir with the sauce.
  6. Step 5: Top with cheese and let melt.
  7. Step 6: Serve over rice, in tortillas, or in lettuce wraps.

Notes

Use a good-quality salsa, since it's one of only a few ingredients and carries most of the flavor.
