Ingredients

2 English cucumbers
3 tbsp soy sauce
2 tbsp rice vinegar
1 tbsp sesame oil
2 cloves garlic, minced
1 tsp sugar
1/2 tsp red pepper flakes
1 tbsp sesame seeds
2 tbsp sliced green onion

Equipment

  • 1 Mixing bowl
  • 1 Knife

Method

Step 1: Smash the cucumbers with the flat side of a knife, then cut into bite-sized pieces.
Tip: Smashing helps the cucumbers absorb the dressing better than slicing alone.
Step 2: Whisk together soy sauce, rice vinegar, sesame oil, garlic, sugar, and red pepper flakes.
Step 3: Toss the cucumbers with the dressing until well coated.
Step 4: Let sit for at least 10 minutes.
Step 5: Garnish with sesame seeds and green onion before serving.

              Notes

Serve this salad within a few hours of making it for the best crunch, since the cucumbers release water over time.
