Ingredients
  

  • 1½ pounds boneless skinless chicken breasts, cut into bite-size pieces
  • 1 pound baby potatoes cut into ½-inch pieces
  • 2 tablespoons olive oil divided
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 4 cloves garlic minced
  • 3 tablespoons butter
  • ½ cup low-sodium chicken broth
  • ½ cup heavy cream
  • ¾ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Method
 

  1. Step 1: Cook the potatoes in 1 tablespoon oil for 12 to 15 minutes until golden and tender, then set aside.
  2. Tip: Cut them small so they cook evenly.
  3. Step 2: Season the chicken with the salt, garlic powder, paprika, and Italian seasoning.
  4. Step 3: Cook the chicken in the remaining oil for 6 to 7 minutes until browned and cooked through.
  5. Tip: Chicken should reach 165°F.
  6. Step 4: Add the butter and garlic and cook for 30 seconds.
  7. Step 5: Pour in the broth and cream, simmer 3 minutes, then stir in the Parmesan.
  8. Tip: Keep the heat low so the cheese melts smoothly.
  9. Step 6: Return the potatoes to the pan, toss, and garnish with parsley.
