Ingredients
  

  • 2 pounds bone-in skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ⅓ cup honey
  • ¼ cup soy sauce
  • 4 cloves garlic minced
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon butter
  • 2 scallions sliced
  • 1 teaspoon sesame seeds

Equipment

  • 9x13-inch baking dish
  • Small saucepan (for the glaze)
  • Pastry brush
  • Instant-read meat thermometer

Method
 

  1. Step 1: Preheat the oven to 425°F (220°C) and pat the chicken very dry.
  2. Tip: Dry skin crisps best.
  3. Step 2: Rub with oil, salt, pepper, and paprika and place skin-side up in a baking dish.
  4. Step 3: Bake 20 minutes.
  5. Step 4: Simmer the honey, soy sauce, garlic, and vinegar for 3 to 4 minutes, then stir in the butter.
  6. Step 5: Brush half the glaze on the chicken and bake 10 minutes, then brush with the remaining glaze.
  7. Tip: Glazing late prevents the honey from burning.
  8. Step 6: Bake 5 to 10 minutes more until the chicken reaches 175°F, then garnish and serve.
