Ingredients
  

  • 1 lb ground beef or Italian sausage
  • 1 onion diced
  • 3 cloves garlic minced
  • 28 oz crushed tomatoes
  • 4 cups beef or chicken broth
  • 2 tbsp tomato paste
  • 1 tbsp Italian seasoning
  • 8 lasagna noodles broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • fresh basil for garnish

  • 1 Large pot

Method
 

  1. Step 1: Brown the beef or sausage with onion, then add garlic and cook 1 minute more.
  2. Step 2: Stir in crushed tomatoes, broth, tomato paste, and Italian seasoning; bring to a simmer.
  3. Step 3: Add the broken noodles and simmer for 12 to 15 minutes, until tender.
  4. Tip: Add the noodles later in cooking so they don't turn mushy.
  5. Step 4: Mix the ricotta with a pinch of salt and pepper.
  6. Step 5: Ladle into bowls and top with ricotta, mozzarella, and parmesan.
  7. Step 6: Garnish with fresh basil and serve hot.

Notes

Add the noodles later in the cooking process so they don't overcook and turn mushy in the soup.
