  • 1 1/2 cups flour
  • 1/3 cup cocoa powder
  • 3/4 cup sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk
  • 1/3 cup oil
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 2 tbsp cocoa powder for the glaze
  • 3 tbsp milk for the glaze

Method
 

  1. Step 1: Grease a cake pan that fits inside a large pot.
  2. Step 2: Whisk flour, cocoa powder, sugar, baking powder, and salt.
  3. Step 3: Whisk in milk, oil, egg, and vanilla until smooth.
  4. Step 4: Pour batter into the prepared pan.
  5. Step 5: Elevate the pan on a rack or foil inside the pot, cover with the lid.
  6. Tip: Elevating the pan prevents it from burning on direct heat.
  7. Step 6: Cook over low heat for 35 to 40 minutes, until a toothpick comes out clean.
  8. Tip: Keep the heat low and steady throughout.
  9. Step 7: Cool, then whisk together glaze ingredients and drizzle over the cake.

Notes

Resist lifting the pot lid too often while cooking, since it lets out the trapped heat that's baking the cake.
