  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 cup pumpkin puree
  • ½ cup packed brown sugar
  • ¼ cup granulated sugar
  • ½ cup neutral oil
  • 2 large eggs
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • 6 ounces cream cheese softened
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract for the filling

Equipment

  • 12-cup muffin pan
  • Paper muffin liners
  • Two mixing bowls
  • Whisk and rubber spatula
  • Cookie scoop or large spoon (for filling the liners)

Method
 

  1. Step 1: Preheat the oven to 375°F (190°C) and line a muffin pan.
  2. Step 2: Beat the cream cheese, powdered sugar, and vanilla until smooth.
  3. Step 3: Whisk the dry ingredients in a large bowl.
  4. Step 4: Whisk the wet ingredients and fold into the dry ingredients until just combined.
  5. Tip: Stop as soon as no dry flour remains.
  6. Step 5: Fill each liner halfway, add 1 tablespoon filling, and top with more batter.
  7. Tip: Cover the filling completely.
  8. Step 6: Bake 20 to 22 minutes and cool in the pan for 10 minutes.
