Buttermilk-marinated chicken tenders fried in a spiced coating, finished with a sweet-spicy hot honey drizzle.

Ingredients
  

  • 1 1/2 lbs chicken tenders
  • 1 cup buttermilk
  • 1 1/2 cups flour
  • 1/4 cup cornstarch
  • 1 tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • oil for frying
  • 1/4 cup hot honey for drizzling

  • 1 Large pot or deep fryer
  • 1 Mixing bowls
  • 1 Wire rack

Method
 

  1. Step 1: Marinate chicken in buttermilk for at least 30 minutes.
  2. Tip: Marinate as long as possible for the most tender result.
  3. Step 2: Mix flour, cornstarch, cayenne, paprika, garlic powder, salt, and pepper.
  4. Step 3: Dredge chicken in the flour mixture, pressing to adhere.
  5. Step 4: Fry at 350°F (175°C) for 4 to 5 minutes per side, until golden.
  6. Step 5: Drain on a rack.
  7. Step 6: Drizzle with hot honey before serving.
  8. Tip: Drizzle right before serving to keep the coating crispy.

Notes

Fry in batches to avoid crowding the pot and dropping the oil temperature.
