Ingredients
  

  • 2 cups mixed berries strawberries, raspberries
  • 1/2 cup sugar
  • 1 tbsp lemon juice
  • 2 tsp unflavored gelatin
  • 2 tbsp cold water
  • 1 1/2 cups heavy cream
  • 1 tsp vanilla extract
  • fresh berries for garnish

  • 1 Mixing bowls

Method
 

  1. Step 1: Puree berries with sugar and lemon juice.
  2. Step 2: Bloom gelatin in cold water, then dissolve into warmed berry puree.
  3. Tip: Warm the puree just enough to dissolve the gelatin, don't boil.
  4. Step 3: Whip cream with vanilla to soft peaks.
  5. Step 4: Fold the berry mixture into the whipped cream.
  6. Tip: Fold gently to keep the mousse light and airy.
  7. Step 5: Divide into serving glasses.
  8. Step 6: Chill at least 2 hours, until set.
  9. Step 7: Garnish with fresh berries before serving.

Notes

Chill the mousse for the full 2 hours so it fully sets before serving.
