Turkey Pesto Meatballs

Ingredients
  

1 1/2 lbs ground turkey
1/3 cup basil pesto
1/2 cup breadcrumbs
1 egg
1/4 cup grated parmesan cheese
2 cloves garlic, minced
salt and pepper, to taste
2 cups marinara sauce, for serving
cooked pasta or zucchini noodles, for serving

Equipment

  • 1 Baking sheet
  • 1 Mixing bowl
  • 1 Saucepan

Method
 

Step 1: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
    Step 2: Combine turkey, pesto, breadcrumbs, egg, parmesan, garlic, salt, and pepper.
      Tip: Don't overmix, or the meatballs can turn dense.
        Step 3: Roll into 1.5-inch meatballs and place on the baking sheet.
          Step 4: Bake for 18 to 20 minutes, until cooked through and golden.
            Step 5: Warm the marinara and toss the baked meatballs to coat.
              Step 6: Serve over pasta or zucchini noodles.

                Notes

                These turkey pesto meatballs freeze well after baking — reheat in sauce for an easy future dinner.
